Fluffy Cloud Eggs
Start your day with protein-packed fluffy egg whites and a cheery sunshine yolk in the centre. Paired with a sweet savoury honey garlic butter sauce, this elevated breakfast dish will awaken your tastebuds.
Ingredients
Cloud Eggs
- Fresh eggs
- Salt and pepper to taste
- Optional: Fresh herbs or grated cheese
Honey Garlic Butter Sauce
- 4 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 tablespoon honey
- 1/2 teaspoon dried herbs, or crispy chili oil, or chili flakes
- a pinch of salt
Directions
Cloud Eggs
Step 1 Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
Step 2 Separate the egg whites from the egg yolks, placing the whites in a large mixing bowl and the yolks in separate small bowls.
Step 3 Season the egg whites with salt and pepper, then beat them with an electric mixer until stiff peaks form.
Step 4 Spoon the whipped egg whites onto the parchment-lined baking sheet, creating cloud-like mounds. Make a small indentation in the center of each mound.
Step 5 Gently place an egg yolk in the center of each egg white cloud.
Step 6 Bake the egg clouds for 7 to 10 minutes until slightly golden or until the yolks reach your desired level of doneness.
Honey Garlic Butter Sauce
Step 1 In a small saucepan over medium heat, melt the butter, honey, salt, herbs (or any of the above options), and minced garlic.
Step 2 Cook for about 1 minute, stirring occasionally, until fragrant, ensuring the garlic doesn't burn.
Step 3 Remove from heat and set aside.
Assembly
Step 1 Serve your cloud eggs immediately, garnished with fresh herbs or grated cheese if desired.
Step 2 Drizzle the warm honey garlic butter sauce over the cloud eggs.
