Flourless Banana Brownies

A guilt-free dessert with an intense cocoa flavour to be savoured. Made with healthy ingredients, this rich flourless brownie is decadently moist and fudgy.

  • 1 medium to large banana

Tip: The riper the banana, the sweeter the brownie.

  • 1 egg
  • 30g unsweetened cocoa powder

You may replace 10g of unsweetened cocoa powder with almond flour or oat flour if 30g is too rich for you.

Tip: Choose the best quality chocolate you can find to achieve that intense, rich chocolate flavour.

  • 4g baking powder
  • 1/4 teaspoon pure vanilla extract (optional)
  • 15g honey or pure maple syrup (if you desire extra sweetness)
  • A handful of walnuts (optional)

Directions


Step 1 Mash the banana in a medium bowl.

Step 2 Add the egg and whisk until well-mixed.

Step 3 Sift in the cocoa powder (and almond flour or oat flour if using) and mix well.

Step 4 Add the honey or pure maple syrup, if using.

Step 5 Stir in the walnuts, if desired.

Step 6 Transfer the mixture to a small baking tray.

Step 7 Top with berries or chocolate chips, if desired.

Step 8 Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

Step 9 Bake in a preheated oven at 175 °C (350 °F) for 15 to 20 minutes, or until you achieve your desired consistency.
