Zesty Lemon Vinaigrette
A dressing that not only bursts with the freshness and uplifting citrusy notes of lemon, but is also zero-waste as it uses every part of the lemon except for its seeds. Elevate your meal prep with this delightful condiment!
Ingredients
- 1 lemon
- 2 tbsp toasted almond slices
- 1 garlic clove, peeled
- 1 tsp honey
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
Directions
Step 1 Cut lemon into quarters and remove seeds.
Step 2 Pulse lemon quarters in a food processor until coarsely chopped.
Step 3 Add toasted almond slices, garlic, honey, salt and pepper.
Step 4 Pulse again until finely chopped.
Step 5 Transfer the mixture to a clean jar and add the extra-virgin olive oil. Shake well.
Step 6 Adjust seasoning to taste.
Store in an airtight container in the fridge for up to 3 days.
Serving suggestions
- Mix with Greek yoghurt for a quick dip, topped with olive oil, fresh herbs, and toasted nuts & seeds.
- Drizzle over roasted vegetables.
- Combine with avocado and spread over toasted sourdough for a delightful snack.
