Health-Boosting Spinach and Egg Bake
Maintain your weight with this quick and easy-to-make low carb breakfast option that will keep you full the whole morning. The addition of spinach makes this mini casserole a health booster with plenty of fibre, calcium, vitamin C and protein.
Ingredients
- 2 egg whites
- 1 whole egg
- a handful of frozen spinach, thawed & squeezed of excess water
- salt and pepper, to taste
- chilli flakes, to taste (optional)
- chopped chives, for garnish
* If you are not on our weight loss programmes, you may want to replace the egg whites with whole eggs and add cheese on top for a richer taste and texture.
Directions
Step 1 Preheat your oven to 350°F (180°C).
Step 2 Using a small ramekin, arrange the spinach around the edge, leaving a hole in the centre.
Step 3 Crack the whole egg and carefully place the yolk in the centre of the spinach. Pour the egg whites evenly over the spinach.
Step 4 Season with salt, pepper, and chilli flakes if using.
Step 5 Bake for 10 to 15 minutes, or until the egg whites are set and the yolk is cooked to your liking.
Step 6 Sprinkle chopped chives before serving.
*The cooking time may vary depending on the size of your ramekin and your oven. Check the eggs after 10 minutes and adjust accordingly.

12 -13 mins: over-medium doneness
14 -15 mins: fully cooked yolk
