Chocolate Pistachio Popcorn Bars

A simple and healthier dessert for your next party. These delicious no-bake popcorn bars studded with nut butter and chopped nuts are made more decadent with a rich, dark chocolate that binds the popcorn. Get creative with your choice of topping and nut mix.

Ingredients

  • 70g dark chocolate (use at least 70% cocoa; or use sugar-free dark chocolate for a sugar-free option)
  • About 3 cups lightly salted or plain popcorn1

Optional toppings:

  • Your favourite nut butter (we used pistachio butter)
  • Roughly chopped nuts of your choice (we used pistachios)
  • Dried cranberries or chopped dried fruits
  • Flakey sea salt

Directions

Step 1 Add the chocolate to a microwave-safe glass dish and heat until melted, stirring every 30 seconds to prevent burning.

Step 2 Once melted, pour the chocolate over the popcorn and mix well. Transfer the mixture to an 8x5 loaf pan lined with parchment paper and smooth it out. Gently press down on the popcorn to pack it together.

Step 3 Add your choice of toppings, such as chopped nuts, dried cranberries, drizzle warmed nut butter, and flakey sea salt.

Step 4 Place the pan in the fridge until the chocolate hardens, then slice into bars and enjoy mindfully!
