Your Go-to Comfort Bowl

 

Ingredients (1 to 2 serving)

  1. Extra lean ground chicken – 4oz (~113g)
  2. Egg – 2 large, beaten
  3. Silken tofu – 100 g
  4. Olive oil – 1 tsp (≈5 mL)
  5. Scallions – ½ stalk, chopped (or 1–2 tbsp finely chopped onion)
  6. Garlic – 2 cloves, minced
  7. Light soy sauce – 2 tsp
  8. Dark soy sauce – 1 tsp
  9. Oyster sauce – 2 tsp (or 1 tsp fish sauce + pinch of Monkfruit sugar)
  10. Monkfruit Sugar – 2 tsp
  11. White pepper – a dash
  12. Cornstarch – 1 tsp
  13. Water – 2 tbsp (for slurry)

Step by step

Cook the meat gravy

  1. In a pan or clay pot, heat a little oil and sauté the garlic and scallions (or onions) until fragrant.
  2. Add chicken and stir-fry until opaque.
  3. Mix soy sauces, fish sauce, monkfruit sugar, and white pepper; pour into pan.
  4. Stir in cornstarch slurry and simmer 2–3 minutes until sauce thickens.
  5. Once the gravy is ready, transfer it to a bowl and set aside.

Assemble & Cook

  1. In the same pan or clay pot, add a little oil and place the tofu inside. Gently break it apart with a spoon.
  2. Pour in beaten eggs.
  3. Layer on the chicken gravy.
  4. Cover and cook on medium for ~3 minutes until eggs are cooked. Taste and add salt and pepper if needed.

Serve & Enjoy

  1. Transfer to your favorite bowl or dish and enjoy warm.

Meal Prep Scaling Tips

Chicken Gravy
Cook a larger batch. Store in airtight containers in the fridge for up to 3 days.

Tofu & Eggs
Keep separate or prepare in smaller portions. Add to the gravy when serving to keep textures fresh.

Prepped chicken gravy can be used in :
Stir-fries with vegetables or rice, noodle bowls, wraps or lettuce cups, omelettes or scrambled eggs.

Adjust seasoning proportionally when scaling
Doubling the chicken = double soy, fish, and slurry.
