Ingredients
Makes 9-10 cookies
- 130g rolled oats
- 75g oat flour
- 30g pumpkin or sunflower seeds
- 70g pistachios (or nuts of choice), roughly chopped
- 70g dates chopped
- 30g dried cranberries
- 60g maple syrup
- 60g vegan butter (melted)
- 80g mashed banana (or applesauce)
- 25g nut or seed butter
- 1½ tsp cinnamon
- Pinch of salt
Optional Topping
- Dark chocolate + ½ tsp coconut oil
- Flaky salt
Method
- Preheat your oven to 180°C and line a baking tray with parchment paper.
- In a mixing bowl, whisk together the melted butter, mashed banana (or applesauce), nut butter, and maple syrup until smooth.
- Add in the oats, oat flour, seeds, nuts, dates, cranberries, cinnamon, and salt. Mix until well combined.
- Scoop and shape into 9–10 cookies, gently flattening them on the tray.
- Bake for 18–22 minutes, until the edges are golden and the centres remain soft and chewy.
- Allow to cool completely.
- Optional : dip in melted dark chocolate, then finish with flaky salt.
