Ingredients

Makes 9-10 cookies

  • 130g rolled oats
  • 75g oat flour
  • 30g pumpkin or sunflower seeds
  • 70g pistachios (or nuts of choice), roughly chopped
  • 70g dates chopped
  • 30g dried cranberries
  • 60g maple syrup
  • 60g vegan butter (melted)
  • 80g mashed banana (or applesauce)
  • 25g nut or seed butter
  • 1½ tsp cinnamon
  • Pinch of salt

Optional Topping

  • Dark chocolate + ½ tsp coconut oil
  • Flaky salt

Method

  • Preheat your oven to 180°C and line a baking tray with parchment paper.
  • In a mixing bowl, whisk together the melted butter, mashed banana (or applesauce), nut butter, and maple syrup until smooth.
  • Add in the oats, oat flour, seeds, nuts, dates, cranberries, cinnamon, and salt. Mix until well combined.
  • Scoop and shape into 9–10 cookies, gently flattening them on the tray.
  • Bake for 18–22 minutes, until the edges are golden and the centres remain soft and chewy.
  • Allow to cool completely.
  • Optional : dip in melted dark chocolate, then finish with flaky salt.
